| | PASTA SAUCES | | Most Italian Cooks have little interest in creating scintillating new sauces for Pasta; instead, they are very skilled at adding individual touches to the classics like tomato or bolognaise sauce or pesto. Every Italian maintains he can recognize his mothers sauces immediately, and that they are the best he has ever eaten. And they probably are, because they are made at home, from scratch, using the best ingredients available just as we do here at Pasta Place. For the basic Pasta Sauces, as for all the other dishes, the ingredients are all important. It is not only 'foodies' who complain that tomatoes in supermarkets nowdays look appetizing but usually taste of nothing. What a joy it is to find vine ripened tomatoes that combine the familiar sweetness of tomatoes with a robust acidity. These tomatoes make the most delicious, full-flavoured sauce. When it comes to making a bolognaise sauce, the quality of the meat is paramount. And it must be freshly minced. Meat of an inferior quality will not give the requisite robustness of this sauce that simmers for hours. |
