A rich, mild double cream blue vein similar to “blue castello”. The cultures grow quickly in the warm, rich, creamy milk producing a firm, chalky cheese. The roqueforti mould cultures break this down to a soft texture and mild, full flavour. A wax coating holds in flavours during the maturing of 8 to 10 weeks. Produced from Friesian milk, in Gippsland Victoria.
Tarago River Camembert
Made very similar to the brie curds camembert is traditionally small in size and matures slightly different to brie because of its size. It is usually firmer. Some people enjoy the cheese fresh and still acidic, or much later with a strong ammonia flavour and pungent rind. Produced from Friesian milk, in Gippsland Victoria.
Willow Grove Smoked Cheddar
Smoked cheddar is a firm close textured delicate cheese which has a distinctive smoked flavour, the black wax prevents surface damage, stops the cheese from drying out and gives the cheese a distinctive appearance. Produced at Willow Grove in Victoria.
Port Salut Cheese
Port Salut is a semi-soft pasteurized cow's milk cheese from Brittany, France with a distinctive orange crust and a mild flavor. Though Port Salut has a mild flavour, it sometimes has a strong smell because it is a mature cheese. The smell increases the longer the cheese is kept — this however does not affect its flavour.
Chevre
“Chevre” = goat in French. This style is a fresh curd with a smooth sharp acidic flavour. Ideal for complimenting any cheese platter. Produced from goat’s milk in South Australia.
